Southwestern Beef Rolls

Soft tortillas rolled up with seasoned beef, beans, and cheese, and cut into bite-sized pieces.

Ingredients
  

  • 1 lb ground beef
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 cup black beans drained
  • 1 cup shredded cheddar
  • 4 large flour tortillas
  • 0.25 cup cilantro chopped

Method
 

  1. Brown the beef with the chili powder and cumin, then drain.
  2. Stir in the black beans and cook 2 minutes until heated through.
  3. Spread the warm beef mixture over each tortilla, then sprinkle with cheese and cilantro.
  4. Roll each tortilla up tightly and let it sit seam-side down for a minute.
  5. Slice into 1-inch rounds and secure with picks if needed.

Notes

Chill the rolls 15 minutes before slicing for cleaner rounds.
