Southwest Tater Tots

Tots tossed in Southwest seasonings and finished with corn, black beans, and a zesty lime drizzle.

Ingredients
  

  • 1 32 oz bag frozen tater tots
  • 2 tsp taco seasoning
  • 1/2 cup corn kernels
  • 1/2 cup black beans drained
  • 1/4 cup cotija cheese crumbled
  • 1/3 cup sour cream
  • 1 lime juiced
  • 2 tbsp cilantro chopped

Method
 

  1. Toss the frozen tots with the taco seasoning, then bake until crisp, about 28 minutes.
  2. Whisk the sour cream with the lime juice to make a thin crema.
  3. Pile the seasoned tots on a platter and scatter the corn and black beans over the top.
  4. Drizzle with the lime crema and sprinkle with cotija.
  5. Finish with cilantro and serve warm.

Notes

Char the corn in a dry skillet first for extra smoky flavor.
