Southern Smothered Chicken

Caramelized onion gravy paired with browned chicken thighs and slow braised to perfection.

Ingredients
  

  • 8 chicken thighs bone-in
  • 2 onions sliced
  • 1/3 cup all-purpose flour
  • 3 cups chicken broth
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 1 tsp salt

Method
 

  1. Season the chicken with salt, dredge lightly in flour, and brown in butter; set aside.
  2. Saute the onions and garlic in the same pan until deeply golden.
  3. Whisk the remaining flour into the pan, then slowly add the broth.
  4. Return the chicken, cover, and simmer 30 minutes until tender.
  5. Spoon the onion gravy over the chicken and serve over rice.

Notes

Let the onions get really golden for the deepest gravy flavor.
