Southern Fried Chicken

Chicken is soaked in buttermilk, then breaded in a special flour and fried to a perfect, golden-brown, and super crispy crust.

Ingredients
  

  • 8 pieces chicken bone-in
  • 2 cups buttermilk
  • 3 cups all-purpose flour
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tbsp salt
  • 4 cups vegetable oil for frying

Method
 

  1. Soak the chicken in buttermilk for at least 1 hour or overnight in the fridge.
  2. Whisk the flour, paprika, garlic powder, and salt in a shallow dish.
  3. Dredge each piece in the seasoned flour, pressing to coat well.
  4. Heat the oil to 350F and fry in batches 12 to 15 minutes, turning once.
  5. Drain on a wire rack and let rest a few minutes before serving.

Notes

Fry to an internal temp of 165F so the meat is cooked but still juicy.
