Snowball Cookies

Tender shortbread snowballs are made with pecans and then rolled in powdered sugar, twice!
Prep Time 20 minutes
Cook Time 15 minutes
Total Time 35 minutes
Servings: 30 cookies

Ingredients
  

  • 1 cup butter softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup pecans finely chopped
  • 1 cup powdered sugar for rolling

Method
 

  1. Cream the butter and powdered sugar, then beat in the vanilla.
  2. Mix in the flour and chopped pecans until a soft dough forms.
  3. Roll into 1-inch balls and place on lined baking sheets.
  4. Bake at 350F for 12 to 15 minutes until the bottoms are lightly golden.
  5. Cool for 5 minutes, then roll the warm cookies in powdered sugar.
  6. Once fully cool, roll them in powdered sugar a second time.

Notes

The double roll is the secret to that classic snowy coating.
