Ingredients
  

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup 2 sticks unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup granulated sugar for rolling
  • 2 tablespoons ground cinnamon for rolling

Method
 

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  3. In a large bowl, beat the softened butter and 1 1/2 cups sugar until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  5. Gradually stir the flour mixture into the butter mixture until just combined.
  6. In a small bowl, mix together the 1/4 cup sugar and cinnamon for the coating.
  7. Roll the dough into 1-inch balls, then roll each ball generously in the cinnamon-sugar mixture.
  8. Place the cookies on prepared baking sheets about 2 inches apart and bake for 8-10 minutes until the edges are set but centers still look slightly soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
