S'mores Skillet Cookie

One giant cookie baked in a cast iron skillet and brought to the table still warm — this is the lazy genius move for a Friday night dessert. Everyone scoops from the center, the marshmallows stay gooey, and you dirty one pan. Serve it with vanilla ice cream and call it a win.

Ingredients
  

  • 1/2 cup unsalted butter melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup crushed graham crackers
  • 1 cup mini marshmallows

Method
 

  1. Preheat oven to 350°F and grease a 10-inch cast iron skillet with butter.
  2. Whisk together melted butter and brown sugar, then stir in egg and vanilla.
  3. Mix in flour, baking soda, and salt until just combined, then fold in chocolate chips and crushed graham crackers.
  4. Spread dough evenly into the skillet and press mini marshmallows into the top.
  5. Bake for 20 to 22 minutes until edges are set and golden but the center is still slightly soft.
  6. Serve warm directly from the skillet with scoops of vanilla ice cream.
