Smoked Paprika Turkey Delight

Roasted turkey with a turkey rub of smoked paprika for a rich smokey and sweet crust.

Ingredients
  

  • 1 whole turkey 12 lb
  • 3 tbsp smoked paprika
  • 0.33 cup olive oil
  • 3 cloves garlic minced
  • 1 tbsp brown sugar
  • 2 tsp salt
  • 1 tsp black pepper

Method
 

  1. Stir the smoked paprika, olive oil, garlic, brown sugar, salt, and pepper into a paste.
  2. Pat the turkey dry and rub the paprika paste all over the skin and into the cavity.
  3. Place the turkey on a rack in a roasting pan.
  4. Roast at 325F, basting once or twice, until the thigh reads 165F, about three hours.
  5. Rest the turkey 20 minutes before carving.

Notes

The brown sugar helps the paprika crust caramelize into a deep mahogany color.
