Total Time 5 hours 20 minutes
Servings: 4 servings

Ingredients

  • 8 chicken drumsticks about 2 1/2 pounds, fully thawed
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup water
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 2 garlic cloves minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water for slurry

Method

  1. Mix soy sauce, 1/3 cup water, brown sugar, vinegar, garlic and ginger in a 5-quart slow cooker. Add drumsticks and turn to coat.
  2. Cover and cook on low for 4–5 hours, until chicken reaches at least 165°F away from bone and is tender. Transfer to a platter.
  3. Pour cooking liquid into a saucepan, skimming excess fat. Bring to a boil. Mix cornstarch with 1 tablespoon cold water, stir into boiling liquid and simmer for 1–2 minutes until glossy.
  4. Spoon sauce over chicken. For browned skin, arrange cooked drumsticks on a broiler-safe tray, brush with sauce and broil 2–3 minutes, watching closely.
