Slow Cooker Potato Soup

Creamy potato soup that is cooked in the slow cooker all day.

Ingredients
  

  • 3 lbs russet potatoes peeled and cubed
  • 1 medium onion diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese shredded
  • 3 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Add the potatoes, onion, broth, butter, salt, and pepper to the slow cooker.
  2. Cover and cook on low for about 7 hours or high for 4 hours until the potatoes are soft.
  3. Mash some of the potatoes against the side to thicken the soup.
  4. Stir in the heavy cream and shredded cheese until melted.
  5. Taste and adjust seasoning before serving.

Notes

Top each bowl with bacon and chives for the full effect.
