Slow Cooker Pot Roast Comfort Food Dinner

Ingredients
  

  • 2 lbs beef chuck roast trimmed of visible fat
  • 1 lb baby carrots
  • 1 lb small red potatoes halved
  • 1 medium onion cut into wedges
  • 3 cloves garlic minced
  • 2 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Method
 

  1. Season the beef roast generously with salt and pepper on all sides.
  2. Place carrots, potatoes, onion, and garlic in the bottom of your slow cooker.
  3. Place the seasoned roast on top of the vegetables.
  4. In a small bowl, whisk together beef broth, tomato paste, thyme, and rosemary. Pour over the roast.
  5. Cover and cook on low for 8 hours or high for 4-5 hours, until beef is fork-tender.
  6. Remove roast and vegetables from slow cooker. Shred or slice the beef and serve with vegetables and a ladle of the cooking liquid as gravy.
