Slow Cooker Dump Hawaiian Chicken Dinner

This sweet and savory Hawaiian chicken is a total crowd-pleaser that tastes like you spent hours in the kitchen (but we know better!). The combination of pineapple and teriyaki creates the most amazing sauce, and your family will be begging you to make this one on repeat. It's basically a tropical vacation in your slow cooker!

Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 can 20 oz pineapple chunks, drained (reserve 1/4 cup juice)
  • 1 cup teriyaki sauce
  • 1 green bell pepper cut into 1-inch chunks
  • 1/4 cup brown sugar

Method
 

  1. Place chicken breasts or thighs in the slow cooker.
  2. In a bowl, mix together teriyaki sauce, brown sugar, and the reserved 1/4 cup pineapple juice.
  3. Pour the sauce mixture over the chicken, then add pineapple chunks and bell pepper pieces on top.
  4. Cover and cook on low for 5-6 hours or high for 2.5-3 hours until chicken is cooked through and tender.
  5. Shred or slice the chicken and serve over white rice or cauliflower rice with extra sauce spooned on top. Garnish with green onions if you're feeling fancy!
