Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 8 oz cream cheese softened
  • 1 packet 1 oz dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 8 slices bacon cooked and crumbled

Method

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Sprinkle the ranch seasoning mix evenly over the chicken, then place the cream cheese on top (cut into chunks for easier melting).
  3. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is tender and fully cooked.
  4. Shred the chicken with two forks right in the slow cooker, then stir in the cheddar cheese and crumbled bacon until everything is well combined and creamy.
  5. Serve in slider buns, over rice, or with tortilla chips for dipping. You can also stuff it into baked potatoes or wrap it in low-carb tortillas!
