Slow Cooker Chili Family Dinner

There's nothing better than coming home to a house that smells amazing and dinner already done! This hearty chili is loaded with protein and fiber to keep everyone satisfied, and you can easily adjust the spice level for your family. Serve it with cornbread or over rice to stretch it even further.

Ingredients
  

  • pounds ground beef 80/20
  • 1 large onion diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 1 can 6 oz tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: shredded cheese sour cream, diced onions, crackers

Method
 

  1. In a large skillet over medium-high heat, brown the ground beef with diced onion and bell pepper, breaking up the meat as it cooks, about 7-8 minutes. Drain excess fat.
  2. Add garlic to the skillet and cook for 1 minute until fragrant. Transfer everything to your slow cooker.
  3. Add kidney beans, black beans, crushed tomatoes, tomato paste, and beef broth to the slow cooker.
  4. Stir in chili powder, cumin, paprika, salt, and pepper. Mix everything together until well combined.
  5. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, stirring occasionally if possible.
  6. Taste and adjust seasonings as needed. Serve hot with your favorite toppings like shredded cheese, sour cream, diced onions, or crackers.
