Slow Cooker Cajun Chicken Alfredo

For this recipe, the heaviest step is done by the slow cooker! You will be melting cajun chicken into a delightful creamy alfredo sauce, which you will stir over hot pasta right before serving.

Ingredients
  

  • 2 lb chicken breasts whole
  • 2 tbsp Cajun seasoning
  • 1 cup chicken broth
  • 1.5 cups heavy cream
  • 1 cup Parmesan grated
  • 3 tbsp cream cheese
  • 16 oz fettuccine

Method
 

  1. Rub the chicken breasts all over with Cajun seasoning and place in the slow cooker.
  2. Pour in the chicken broth, cover, and cook on low for 4 hours until tender.
  3. Shred the chicken right in the cooker using two forks.
  4. Stir in the heavy cream, cream cheese, and Parmesan, then cover and cook 20 more minutes until creamy.
  5. Cook the fettuccine separately until al dente, drain, and toss with the Cajun chicken Alfredo before serving.

Notes

Cook time reflects the hands-off slow cooker hours; active time is only about 15 minutes.
