Slow Cooker Beef Bourguignon

Beef that is tender and slow cooked with red wine, mushrooms, carrots, and pearl onions is the perfect way to enjoy the holidays.

Ingredients
  

  • 2.5 lb beef chuck cubed
  • 6 slices bacon chopped
  • 2 cups dry red wine
  • 1 cup beef broth
  • 3 large carrots chopped
  • 8 oz mushrooms quartered
  • 1 cup pearl onions
  • 3 tbsp tomato paste

Method
 

  1. Cook the chopped bacon in a skillet until crisp, then brown the beef cubes in the bacon fat.
  2. Transfer the bacon and beef to the slow cooker and add the carrots, mushrooms, and pearl onions.
  3. Whisk together the red wine, beef broth, and tomato paste, then pour over the meat.
  4. Cover and cook on low for 8 hours, until the beef is fork-tender.
  5. Stir, skim any excess fat, and serve hot over mashed potatoes or noodles.
