Sloppy Joes

Ingredients
  

  • 2 lbs ground beef 80/20
  • 1 small onion diced
  • 3 cloves garlic minced
  • 6 oz tomato paste
  • 1/2 cup beef broth
  • 3 tbsp sugar-free ketchup
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Method
 

  1. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon, for about 6-8 minutes.
  2. Add the diced onion and cook for 3-4 minutes until softened, then add garlic and cook for 1 minute until fragrant.
  3. Stir in the tomato paste, beef broth, ketchup, apple cider vinegar, Worcestershire sauce, chili powder, and smoked paprika.
  4. Reduce heat to medium-low and simmer for 10-15 minutes, stirring occasionally, until the mixture thickens to your desired consistency.
  5. Season with salt and pepper to taste, then serve over cauliflower rice, in lettuce wraps, or over roasted vegetables.
