Skinny Eggnog

An eggnog made with low-fat milk and spices.

Ingredients
  

  • 3 cups low-fat milk
  • 2 egg yolks
  • 3 tbsp maple syrup
  • 0.5 tsp vanilla extract
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cinnamon

Method
 

  1. Warm the milk in a saucepan over medium heat until steaming but not boiling.
  2. Whisk the egg yolks and maple syrup in a bowl, then slowly stream in a ladle of the hot milk to temper.
  3. Pour the egg mixture back into the saucepan and cook, stirring constantly, until it thickens slightly, about 5 minutes.
  4. Remove from heat and stir in the vanilla, nutmeg, and cinnamon.
  5. Chill at least 1 hour, then serve in glasses with a dusting of nutmeg.

Notes

Keep stirring while it thickens so the eggs stay silky, never scrambled. Chill well before serving.
