Skillet Shepherd's Pie

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 4 cups mashed potatoes thick and stiff
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat the oven to 350 degrees F.
  2. Brown the ground beef in an oven-safe skillet over medium-high heat and drain the fat.
  3. Add the onion and garlic and cook until softened.
  4. Stir in the Worcestershire sauce, beef broth, frozen corn and peas and simmer 5 minutes until slightly thickened.
  5. Spread the mashed potatoes evenly over the top, sealing to the edges.
  6. Bake for 25 to 30 minutes, until the top is set and lightly golden.

Notes

Made with beef rather than lamb this is technically a cottage pie. Worcestershire is the flavor backbone and is easy to under-add, so be generous. An oven-safe skillet is essential and cast iron is ideal. Keep the mashed potato topping stiff or it sinks into the filling. Frozen peas and corn need no pre-cooking - they heat through in the oven.
