In a large deep skillet or Dutch oven over medium-high heat, brown the ground beef with the diced onion, breaking up the meat as it cooks, about 6-8 minutes.
Add the minced garlic, salt, pepper, and paprika to the beef mixture and cook for another minute until fragrant.
Stir in the uncooked pasta, beef broth, tomato sauce, diced tomatoes with their juices, and Worcestershire sauce, bringing the mixture to a boil.
Reduce heat to medium-low, cover the skillet, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Remove from heat and stir in 1 1/2 cups of the shredded cheddar cheese and the chopped pickles if using, mixing until the cheese is melted and incorporated.
Sprinkle the remaining 1/2 cup cheese over the top, cover for 2-3 minutes to melt, then serve hot directly from the skillet.
