Simple Turkey Enchiladas Flavor Burst

Ingredients
  

  • 3 cups cooked turkey shredded or diced
  • 2 cups red enchilada sauce divided
  • 1 cup sour cream
  • 2 cups shredded Mexican blend cheese divided
  • 1 can 4 oz diced green chiles
  • 1/2 cup diced onion
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 8 large flour tortillas 10-inch
  • Salt and pepper to taste
  • Fresh cilantro diced avocado, and lime wedges for serving (optional)

Method
 

  1. Preheat your oven to 350°F and spray a 9x13-inch baking dish with cooking spray. Pour 1/2 cup of enchilada sauce in the bottom and spread it around.
  2. In a large bowl, mix together the turkey, 1/2 cup enchilada sauce, sour cream, 1 cup cheese, green chiles, onion, cumin, garlic powder, salt, and pepper until well combined.
  3. Warm your tortillas in the microwave for 30 seconds wrapped in a damp paper towel to make them easier to roll.
  4. Spoon about 1/2 cup of the turkey mixture down the center of each tortilla. Roll them up tightly and place seam-side down in your prepared baking dish.
  5. Pour the remaining enchilada sauce over the top of all the rolled enchiladas, making sure they're all covered.
  6. Sprinkle the remaining 1 cup of cheese evenly over the top.
  7. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 5 minutes until the cheese is bubbly and starting to brown.
  8. Let cool for 5 minutes, then top with fresh cilantro, avocado, and a squeeze of lime juice if desired. Serve with extra sour cream on the side!
