Simple Sausage Stuffing

Ingredients
  

  • 1 pound Italian sausage casings removed
  • ½ cup butter
  • 1 large onion diced
  • 3 celery stalks diced
  • 12 cups cubed bread about 1 pound, day-old or lightly toasted
  • 2 tablespoons fresh sage chopped
  • 1 tablespoon fresh thyme leaves
  • cups chicken broth
  • 2 large eggs beaten
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Preheat oven to 350°F. Grease a 9x13-inch baking dish with butter or cooking spray.
  2. In a large skillet over medium-high heat, cook sausage until browned and crumbly, about 8 minutes. Transfer to a large mixing bowl.
  3. In the same skillet, melt butter over medium heat. Add onion and celery, cooking until softened, about 6-7 minutes.
  4. Add the vegetable mixture to the bowl with sausage. Stir in bread cubes, sage, thyme, salt, and pepper.
  5. In a separate bowl, whisk together chicken broth and beaten eggs. Pour over bread mixture and toss gently until evenly moistened.
  6. Transfer stuffing to prepared baking dish and cover with foil. Bake for 30 minutes, then remove foil and bake another 15 minutes until golden and crispy on top.
  7. Let rest 5 minutes before serving. Store covered in the refrigerator and reheat on Thanksgiving day!
