Sichuan Dan Dan Noodles

Crispy spiced pork on springy noodles and chili-sesame sauce.

Ingredients
  

  • 12 oz wheat noodles
  • 1 lb ground pork
  • 3 tbsp chili oil
  • 2 tbsp soy sauce
  • 2 tbsp tahini
  • 1 tsp Sichuan peppercorns ground
  • 3 scallions sliced
  • 2 cloves garlic minced

Method
 

  1. Cook the noodles according to the package, then drain and set aside.
  2. Brown the ground pork in a hot skillet until crisp at the edges.
  3. Whisk chili oil, soy sauce, tahini, ground peppercorns, and garlic into a sauce.
  4. Toss the noodles in the sauce until glossy and coated.
  5. Top with the crispy pork and a shower of scallions before serving.

Notes

Adjust the Sichuan peppercorns up if you love that tingly numbing buzz.
