Shrimp Tempura

Shrimp that are covered in light tempura batter that has been fried until it is pale and crispy.

Ingredients
  

  • 1 lb large shrimp peeled, tails on
  • 1 cup flour
  • 1 egg
  • 1 cup ice water
  • 2 cups vegetable oil for frying
  • 1/4 cup soy dipping sauce for serving

Method
 

  1. Make small slits along the underside of each shrimp so they stay straight.
  2. Whisk the egg with the ice water, then gently stir in the flour, leaving it lumpy.
  3. Heat the oil to 350 degrees F in a deep pan.
  4. Hold each shrimp by the tail, dip in batter, and lower into the oil.
  5. Fry 2 to 3 minutes, until pale gold and crisp.
  6. Drain on paper towels and serve with dipping sauce.

Notes

Keep the batter ice cold and lumpy for the lightest tempura.
