Shrimp Pad Thai

Servings: 4 servings

Ingredients
  

  • 8 oz rice noodles
  • 1 lb shrimp peeled and deveined
  • 2 tbsp vegetable oil
  • 2 eggs lightly beaten
  • 3 cloves garlic minced
  • 1 cup bean sprouts
  • 3 green onions sliced
  • 1/4 cup peanuts chopped
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp tamarind paste
  • 1 tbsp sugar
  • 1 lime cut into wedges

Method
 

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. Heat 1 tbsp of oil in a large skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes. Remove shrimp from the skillet.
  3. Add remaining oil and garlic. Sauté for 1 minute until fragrant.
  4. Push garlic to one side. Add eggs to the other side of the skillet; scramble until just set.
  5. Add noodles, fish sauce, soy sauce, tamarind paste, and sugar to the skillet. Stir well to combine.
  6. Return shrimp to the skillet along with bean sprouts and green onions. Toss everything together for another 2-3 minutes.
  7. Transfer to a plate and top with chopped peanuts. Serve with lime wedges on the side.
