Shrimp Gumbo

Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 1/2 pound sausage sliced
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 4 cloves garlic minced
  • 4 cups chicken broth
  • 1 can 14.5 ounces diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked rice
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Add sausage and simmer for 30 minutes, stirring occasionally.
  2. Add the onion, bell pepper, celery, and garlic. Stir and cook for 5-6 minutes, until vegetables soften.
  3. In a large pot, heat oil over medium heat, then whisk in the flour. Cook, stirring constantly, until the roux is a deep brown.
  4. Pour in the chicken broth and tomatoes. Season with salt, black pepper, and cayenne pepper. Bring to a boil, then reduce heat.
  5. Serve gumbo over rice, garnished with fresh parsley. Enjoy with family and friends!
  6. Stir in the shrimp and cook until they are pink and cooked through, about 3-5 minutes.
