Shrimp Ceviche

A chilled shrimp ceviche-style appetizer made with cooked shrimp, lime and crunchy vegetables. Using cooked shrimp makes the preparation straightforward for family meals.

Ingredients
  

  • 1 pound cooked shrimp peeled, deveined, chilled and patted dry
  • 1 cup lime juice
  • 1/2 cup diced red onion
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1 jalapeño diced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Tortilla chips for serving

Method
 

  1. Chop the cooked, chilled shrimp into bite-size pieces and place in a bowl.
  2. Pour over the lime juice and refrigerate for 10 minutes while preparing the vegetables.
  3. Drain the shrimp, reserving 2 tablespoons of the lime juice. Mix with the red onion, cucumber, tomato, jalapeño and cilantro.
  4. Season with salt and pepper, adding a little reserved lime juice to taste. Refrigerate for 20 minutes, then serve with tortilla chips. Keep refrigerated until serving.
