Shrimp Bisque

Ingredients
  

  • 1 pound shrimp peeled and deveined
  • Shrimp shells
  • 2 tablespoons butter
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 4 cups seafood stock
  • 1 cup heavy cream
  • Salt and pepper to taste

Method
 

  1. Add chopped onions and garlic. Cook until softened.
  2. Add the shrimp to the pot. Cook until they turn pink.
  3. Blend the soup until smooth using a stick blender or countertop blender.
  4. Pour in the seafood stock. Let it simmer for 20 minutes to blend flavors.
  5. Remove the shells from the pot. If available, use a strainer.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread for dipping. Enjoy!
  8. Start by sautéing shrimp shells in a large pot with butter for 5 minutes. This enhances the flavor.
  9. Stir in the heavy cream. Cook over low heat until thickened.
  10. Stir in the tomato paste and paprika. Mix well.
