Sheet-Pan Sausage and Egg Bake

This is the one-pan breakfast-for-dinner that you will come back to every single week. Sausage, potatoes, peppers, and eggs all on one sheet pan and cleanup is just one dish. It looks impressive for how little actual work goes into it.

Ingredients
  

  • 1 lb breakfast sausage links sliced into coins
  • 3 cups baby potatoes halved
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small onion diced
  • 6 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Method
 

  1. Preheat oven to 400°F and line a large sheet pan with foil.
  2. Toss potatoes, sausage coins, bell peppers, and onion with olive oil, garlic powder, smoked paprika, salt, and pepper on the sheet pan.
  3. Spread into a single layer and roast for 25 minutes, stirring once halfway through.
  4. Use a spoon to create six wells in the mixture and crack one egg into each well.
  5. Return to the oven for 8 to 10 minutes until egg whites are set but yolks are still slightly runny.
  6. Scatter shredded cheddar over the top and serve directly from the pan.
