This cold noodle salad is a little different from the usual fare and kids who like Asian-style food at restaurants usually go crazy for it. Ingredients
  

  • 2 cups cooked spaghetti or lo mein noodles cooled
  • 1/2 cup frozen shelled edamame thawed
  • 1/4 cup shredded carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds

Method
 

  1. Whisk together soy sauce, sesame oil, rice vinegar, and honey in a small bowl to make the dressing.
  2. Combine cooled noodles, edamame, and shredded carrots in a large bowl.
  3. Pour the dressing over the noodles and toss until everything is evenly coated.
  4. Sprinkle sesame seeds on top, then portion into lunchbox containers.
  5. Refrigerate overnight for best flavor — it gets better as it sits.
