In a large bowl, dissolve yeast in warm water and let stand for 5 minutes until foamy.
Add honey, salt, and 1/4 cup mixed seeds to the yeast mixture and stir to combine.
Gradually add flour, stirring until a shaggy dough forms, then turn out onto a floured surface and knead for 8-10 minutes until smooth and elastic.
Place dough in a greased bowl, cover with a damp towel, and let rise in a warm place for 1-2 hours until doubled in size.
Punch down dough and shape into a round loaf, then place on a parchment-lined baking sheet.
Cover and let rise for another 45 minutes until puffy.
Preheat oven to 425°F and brush the top of the loaf with egg white, then sprinkle generously with remaining seeds.
Slash the top with a sharp knife, place in the oven, and bake for 35-40 minutes until golden brown and the loaf sounds hollow when tapped on the bottom.
