Savory Beef and Spinach Rice Wraps

Ingredients
  

  • 1 lb ground beef
  • 2 cups cooked white rice
  • 1 cup fresh spinach chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 6 large tortillas
  • Optional: Sour cream salsa, or avocado for serving

Method
 

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the taco seasoning to the skillet with the ground beef, following the instructions on the packet. Stir until the beef is well coated.
  3. Add the cooked rice and chopped spinach to the skillet. Stir everything together until well combined and heated through.
  4. Remove the skillet from heat and mix in the shredded cheddar cheese until melted and evenly distributed.
  5. Warm the tortillas in the microwave or on a skillet until pliable.
  6. Spoon the beef and rice mixture onto the center of each tortilla.
  7. Fold in the sides of the tortilla and then roll it up from the bottom to the top, forming a wrap.
  8. Serve immediately with optional sour cream, salsa, or avocado on the side. Enjoy!

Notes

These wraps are perfect for meal prepping—store the filling separately and assemble wraps just before eating. You can add other favorite veggies like bell peppers or onions for extra flavor and nutrition. Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or on the stovetop.
