Sausage and Spinach One-Pot Pasta

This hearty pasta dish is a real crowd-pleaser in my house! The Italian sausage gives it tons of flavor, and I love sneaking in the spinach for some extra nutrition. My kids devour this without even realizing they're eating their greens!

Ingredients
  

  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • 1 can 28 oz crushed tomatoes
  • 3 cups chicken broth
  • 12 oz rigatoni or penne pasta
  • 4 cups fresh spinach roughly chopped
  • ½ cup heavy cream
  • ¾ cup grated Parmesan cheese
  • Salt and black pepper to taste

Method
 

  1. In a large pot or Dutch oven over medium-high heat, cook Italian sausage, breaking it up with a spoon, until browned and cooked through, about 6-7 minutes.
  2. Add diced onion and cook for 3-4 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes (if using), cooking for 1 minute.
  3. Pour in crushed tomatoes and chicken broth. Bring to a boil.
  4. Add pasta and stir well. Reduce heat to medium and simmer, stirring occasionally, for 12-14 minutes until pasta is tender.
  5. Stir in spinach and heavy cream. Cook for 2-3 minutes until spinach wilts.
  6. Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste. Let rest for 5 minutes before serving to allow sauce to thicken. Enjoy!
