Salsa Chicken

Tender chicken is simmered in salsa for an easy three ingredient dish.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 1/2 cups salsa
  • 1 cup shredded cheddar cheese

Method
 

  1. Season the chicken breasts lightly with salt and place them in a skillet.
  2. Pour the salsa over the top and bring to a gentle simmer.
  3. Cover and cook over medium-low heat for about 20 minutes, until the chicken reaches 165F.
  4. Sprinkle the cheese over the chicken and cover until melted, about 3 minutes.
  5. Spoon the warm salsa from the pan over each piece before serving.

Notes

Shred the chicken right in the sauce for easy taco filling.
