- Mix the ground beef with the breadcrumbs, egg, salt and pepper and form into 4 to 6 oval patties.
- Sear the patties in a hot skillet until browned on both sides, then remove to a plate.
- Add the onion and mushrooms to the same pan and cook until softened, scraping up the browned bits.
- Whisk the cornstarch into the cold beef broth, then pour it into the pan with the Worcestershire sauce.
- Simmer until the gravy thickens, return the patties to the pan and cook through, about 10 minutes.
Notes
Breadcrumbs and egg keep the patties tender and stop them shrinking tight; skip them and the patties go dense and rubbery. Mix the cornstarch into cold broth before it hits the hot pan or you will get lumps. Do not wash the pan between steps - the browned bits give the gravy its depth. 80/20 beef is the sweet spot; leaner dries out and fattier makes greasy gravy.
