Rum Balls

Rich no-bake cocoa balls with rum and coated in sugar.

Ingredients
  

  • 2.5 cups vanilla wafer crumbs
  • 1 cup powdered sugar
  • 1/4 cup cocoa powder
  • 1 cup chopped nuts
  • 1/3 cup dark rum
  • 2 tbsp corn syrup
  • 1/2 cup sugar for rolling

Method
 

  1. Mix the wafer crumbs, powdered sugar, cocoa, and nuts in a bowl.
  2. Stir in the rum and corn syrup until the mixture holds together.
  3. Roll into small balls.
  4. Roll each in granulated sugar to coat.
  5. Chill at least 1 hour and let them sit a day for the flavor to mellow.

Notes

They taste even better after a day or two in the fridge.
