Rote Grütze

A chilled mixed-berry compote with a cream or vanilla sauce pour.

Ingredients
  

  • 4 cups mixed red berries
  • 1/2 cup sugar
  • 1 cup red grape juice
  • 3 tbsp cornstarch
  • 1 tsp vanilla
  • 1/2 cup cream for serving

Method
 

  1. Combine the berries, sugar, and most of the grape juice in a saucepan and bring to a gentle simmer.
  2. Whisk the cornstarch into the remaining cold juice until smooth.
  3. Stir the cornstarch slurry into the berries and cook until the mixture thickens and turns glossy.
  4. Remove from heat, stir in the vanilla, and let cool, then chill until set.
  5. Spoon into bowls and pour cold cream or vanilla sauce over the top.

Notes

Chill it for at least an hour so it sets into that classic pudding texture.
