Method
- Combine the berries, sugar, and most of the grape juice in a saucepan and bring to a gentle simmer.
- Whisk the cornstarch into the remaining cold juice until smooth.
- Stir the cornstarch slurry into the berries and cook until the mixture thickens and turns glossy.
- Remove from heat, stir in the vanilla, and let cool, then chill until set.
- Spoon into bowls and pour cold cream or vanilla sauce over the top.
Notes
Chill it for at least an hour so it sets into that classic pudding texture.
