Rosemary Shortbread

Shortbread infused with fresh rosemary is crumbly and buttery.

Servings: 20 cookies

Ingredients
  

  • 1 cup butter softened
  • 2/3 cup sugar
  • 2.25 cups flour
  • 2 tbsp fresh rosemary finely chopped
  • 1/4 tsp salt

Method
 

  1. Cream the butter and sugar until pale and fluffy.
  2. Mix in the rosemary, then the flour and salt until a dough forms.
  3. Press into a parchment-lined pan or roll and cut into rounds.
  4. Chill 20 minutes, then prick all over with a fork.
  5. Bake at 325F for 16 to 18 minutes until pale gold; cool before cutting.

Notes

Finely chop the rosemary so it distributes evenly.
