Roasted Chestnuts

Chestnuts have creamy centers that are buttery and warm. The roasted chestnut shells are crackly and create a perfect texture.

Ingredients

  • 1 lb fresh chestnuts
  • 1 tbsp unsalted butter melted
  • 0.5 tsp flaky sea salt

Method

  1. Cut an X into the flat side of each chestnut shell with a sharp knife.
  2. Soak the chestnuts in warm water for about 10 minutes, then pat dry.
  3. Spread them cut side up on a baking sheet.
  4. Roast at 425F for 20 to 25 minutes until the shells curl open and the insides are tender.
  5. Toss the peeled warm chestnuts with melted butter and flaky salt before serving.

Notes

Peel them while they are still hot, because cold chestnuts cling stubbornly to their shells.
