Ricotta and Spinach Phyllo Bites

Baked until golden for an elegant warm appetizer, these flaky phyllo cups are filled with creamy ricotta and spinach.

Ingredients
  

  • 24 mini phyllo shells
  • 1 cup ricotta
  • 1 cup frozen spinach thawed and squeezed dry
  • 0.25 cup Parmesan grated
  • 1 clove garlic minced
  • 1 egg

Method
 

  1. Preheat the oven to 375F and place the phyllo shells on a baking sheet.
  2. Mix the ricotta, drained spinach, Parmesan, garlic, and egg until combined.
  3. Spoon the filling into each phyllo shell.
  4. Bake 18-20 minutes until the filling is set and the shells are golden.
  5. Let cool a few minutes and serve warm.

Notes

Squeeze the spinach really dry or the filling turns watery.
