Reuben Hot Sandwich with Sauerkraut

If you've never made a Reuben at home, you're in for a treat! This deli-style favorite is surprisingly easy to whip up in your own kitchen. The tangy sauerkraut and creamy Russian dressing paired with corned beef and Swiss cheese create the ultimate flavor combination that'll have everyone asking for seconds.

Ingredients
  

  • 8 slices rye bread
  • 1 pound sliced corned beef
  • 8 slices Swiss cheese
  • 1 cup sauerkraut drained and squeezed dry
  • 1/2 cup Russian dressing
  • 4 tablespoons butter softened

Method
 

  1. Butter one side of each slice of rye bread. Place 4 slices butter-side down on your work surface.
  2. Spread about 1 tablespoon of Russian dressing on each unbuttered side. Layer each with 1 slice of Swiss cheese.
  3. Divide corned beef evenly among the 4 sandwiches, piling it on top of the cheese. Add 1/4 cup sauerkraut to each sandwich.
  4. Top each with another slice of Swiss cheese and drizzle with a little more Russian dressing. Place remaining bread slices on top, butter-side up.
  5. Heat a large skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side, pressing down gently with a spatula, until golden brown and cheese is melted.
  6. Cut sandwiches in half diagonally and serve immediately with extra Russian dressing on the side for dipping.
