Reese's Cheesecake Bars

Peanut butter cheesecake bars with a layer of chocolate cookie batter and topped with reese's pieces.

Ingredients
  

  • 20 chocolate sandwich cookies crushed
  • 4 tbsp butter melted
  • 16 oz cream cheese softened
  • 3/4 cup creamy peanut butter
  • 3/4 cup sugar
  • 2 large eggs
  • 8 mini Reese's cups chopped

Method
 

  1. Preheat the oven to 325 degrees F and line a 9x13 pan with parchment.
  2. Press the cookie crumbs mixed with melted butter into the bottom of the pan.
  3. Beat the cream cheese, peanut butter, and sugar until smooth, then beat in the eggs.
  4. Pour the batter over the crust and scatter the mini Reese's on top.
  5. Bake 30 to 35 minutes until set in the center.
  6. Cool, then chill at least 3 hours before lifting out and cutting into bars.

Notes

Use the parchment overhang to lift the whole slab out for tidy cuts.
