Raspberry Truffle Brownies

Decadent brownies with layers of raspberry preserves and a smooth chocolate truffle topping.

Ingredients
  

  • 3/4 cup butter melted
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/2 cup raspberry preserves
  • 1 cup dark chocolate chopped
  • 1/2 cup heavy cream

Method
 

  1. Bake a brownie base at 350F for 28 to 30 minutes in a lined 8x8 pan, then cool.
  2. Spread raspberry preserves evenly over the cooled brownies.
  3. Heat cream until steaming and pour over the chopped chocolate, stirring into a smooth ganache.
  4. Pour ganache over the raspberry layer and spread evenly.
  5. Chill 1 hour until the truffle topping sets, then slice into small squares.
