Raspberry Ripple Brownies

Tangy and sweet raspberry swirls mixed in with fudgy and gooey brownie batter.

Ingredients
  

  • 0.5 cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 0.75 cup flour
  • 0.5 cup cocoa powder
  • 1 cup fresh raspberries
  • 2 tbsp sugar for the sauce

Method
 

  1. Simmer the raspberries with the extra sugar until jammy, then mash and cool.
  2. Preheat the oven to 350°F and line a pan with parchment.
  3. Whisk the butter, sugar, and eggs, then fold in the flour and cocoa.
  4. Spread the batter into the pan and dollop the raspberry sauce on top.
  5. Swirl with a knife to create ripples.
  6. Bake for 28 to 30 minutes, then cool before slicing.

Notes

Frozen raspberries work just as well as fresh for the sauce.
