Raspberry Frosted Sugar Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg
  • 1.5 tsp vanilla extract
  • 2.75 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups powdered sugar for frosting
  • 1/2 cup unsalted butter softened, for frosting
  • 3 tbsp raspberry jam for frosting

Method
 

  1. Cream 1 cup butter and the granulated sugar, then beat in the egg and vanilla.
  2. Stir in the flour, baking powder, and salt to form a soft dough.
  3. Scoop into thick rounds on lined sheets and bake at 350F for 9 to 11 minutes until barely golden. Cool completely.
  4. Beat the powdered sugar, 1/2 cup butter, and raspberry jam until fluffy and pink.
  5. Swirl the frosting generously over each cooled cookie.
