Quick Garlic Mashed Potatoes

Ingredients
  

  • 3 pounds russet potatoes peeled and cut into 2-inch chunks
  • 6 cloves garlic peeled
  • 1 tablespoon salt plus more to taste
  • ½ cup butter softened
  • ¾ cup whole milk warmed
  • ½ cup sour cream
  • ½ teaspoon black pepper
  • 2 tablespoons fresh chives chopped (optional)

Method
 

  1. Place potatoes and garlic cloves in a large pot and cover with cold water by 1 inch. Add 1 tablespoon salt and bring to a boil over high heat.
  2. Reduce heat to medium and simmer for 15-18 minutes, until potatoes are fork-tender and easily pierced.
  3. Drain potatoes and garlic well, then return them to the hot pot for 1 minute to let excess moisture evaporate.
  4. Add butter to the pot and mash potatoes and garlic together using a potato masher until mostly smooth.
  5. Stir in warm milk and sour cream until creamy and well combined. Season with pepper and additional salt to taste.
  6. Transfer to a serving bowl and garnish with fresh chives if desired. Serve hot!
