Quick & Filling 15-Minute Beef and Bean Burritos

Ingredients
  

  • 1 lb ground beef
  • 1 can 15 oz refried beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • 1/2 cup salsa
  • 1/2 cup sour cream optional
  • 1/4 cup chopped cilantro optional

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add the taco seasoning to the beef along with 1/4 cup of water. Stir and cook for another 2-3 minutes until well combined and heated through.
  3. Warm the tortillas in the microwave for about 20 seconds to make them more pliable.
  4. Spread a spoonful of refried beans down the center of each tortilla.
  5. Top the beans with the seasoned beef, followed by a sprinkle of shredded cheddar cheese.
  6. Add a spoonful of salsa on top of the cheese.
  7. Roll up the tortillas, folding in the sides as you go to keep the filling inside.
  8. Place the burritos seam-side down on a plate and microwave for about 30 seconds to melt the cheese.
  9. Serve your burritos immediately, with a dollop of sour cream and a sprinkle of chopped cilantro if desired.

Notes

Feel free to customize by adding your family's favorite toppings, such as avocado slices, jalapeƱos, or diced tomatoes. For a healthier version, use whole wheat tortillas and low-fat cheese.
