Preheat your oven to 425°F and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, brown sugar, baking powder, salt, and pumpkin pie spice.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
In a separate bowl, whisk together pumpkin puree and buttermilk until smooth.
Pour the pumpkin mixture into the flour mixture and stir gently with a fork until just combined. Don't overmix!
Turn the dough out onto a lightly floured surface and pat into a 1-inch thick rectangle. Fold the dough in half, then pat out again. Repeat this process 3-4 times for extra flaky layers.
Pat the dough to about ¾-inch thickness and cut out biscuits using a 2½-inch round cutter. Press straight down without twisting for the best rise.
Place biscuits on the prepared baking sheet, touching slightly for soft sides, and brush tops with melted butter.
Bake for 16-18 minutes until golden brown on top. Serve warm with butter and honey!
