Pulled Pork Nacho Cups

Crispy tortilla cups filled with saucy pulled pork, melted cheese and great toppings.

Ingredients
  

  • 24 scoop-shaped tortilla chips
  • 2 cups pulled pork cooked
  • 0.5 cup barbecue sauce
  • 1.5 cups shredded Mexican cheese
  • 2 tbsp sliced jalapeños
  • 2 tbsp chopped cilantro

Method
 

  1. Preheat oven to 375°F and arrange tortilla scoops on a baking sheet.
  2. Toss pulled pork with barbecue sauce.
  3. Spoon pork into each chip and top with shredded cheese.
  4. Bake 8 to 10 minutes until cheese is melted and bubbly.
  5. Top each cup with a jalapeño slice and cilantro.
  6. Serve immediately while warm.

Notes

Use the sturdy scoop-shaped chips so they hold up under the toppings.
