Pork Chops Baked in Onion Soup Mix Mushroom Gravy

An easy, comforting pork chop dinner with a creamy mushroom gravy made from onion soup mix, baked until tender and served with lemon pepper asparagus.

Ingredients
  

  • 3 thick cut pork chops
  • 8 oz* mushrooms rinsed and chopped
  • 2 tablespoons* plant butter for browning pork chops
  • 1 can cream of mushroom soup
  • 1 can water using the empty soup can
  • 1 packet dry onion soup mix
  • 1 bunch* asparagus
  • 1 tablespoon* plant butter for cooking asparagus
  • 1/2 teaspoon* lemon pepper seasoning for asparagus

Method
 

  1. Rinse the mushrooms and give them a quick chop while you get everything else ready.
  2. Brown the pork chops in plant butter for about 3-4 minutes on each side.
  3. For the gravy, combine cream of mushroom soup, one can of water, the chopped mushrooms, and a packet of dry onion soup mix. Mix it all together.
  4. Pour that mixture right over the browned pork chops.
  5. Bake at 350 for about an hour, hour and a half.
  6. While those bake, make asparagus with a little plant butter and lemon pepper seasoning.
